Tea

Herbal tea is the heart of Applied Poetry. Every step of creating each blend is approached with utmost care.

I specialise in collecting Herbs to be enjoyed as a cup of tea. My favourites are wild Flowers, Weeds and invasive species often overlooked as having any value. 

I process all Plants by hand, using different combinations of traditional techniques of “fermentation” (or more accurately enzymatic oxidation) to bring depth and richness to each cup.

An Ode to Copenhagen

My tea is my love letter to Copenhagen, embodied by the very Plants we live our everyday lives amongst.

Fermenting

Working with wild Plants also means working with Microbes.

Foraging for wild Yeasts and working with them to create fermented, fizzy drinks are crucial parts of my work.
